Chondroitin is an acidic mucopolysaccharide extracted from the cartilage, nasal bone, trachea, throat bone, and other cartilage tissues of pigs, cows, and chickens. The appearance is a white powder, odorless, with strong water absorption. It is easily soluble in water and forms a high viscosity solution. It is insoluble in ethanol and other organic solvents. Its salts are relatively stable to heat and are not damaged when heated up to 80 ℃. Chondroitin sulfate aqueous solution is unstable when exposed to high temperatures or acids, mainly due to deacetylation or degradation into monosaccharides or polysaccharides with smaller molecular weights.
